Sicilian Tomato & Basil Sauce The simplest, truest flavour of Italy

The most classic of Italian sauces, done properly. Chunky Italian tomato pulp slow-cooked with fresh basil, garlic, and a drizzle of extra virgin olive oil — nothing more than the ingredients a Sicilian nonna would reach for on a weekday evening. The natural sweetness of southern Italian tomatoes does most of the work; a pinch of sea salt and a touch of sugar bring everything into balance.

Warm through and toss with freshly cooked pasta — spaghetti, penne, or whatever you have in the cupboard — finish with torn basil and a grating of Parmigiano. Equally good as a pizza base, spooned over gnocchi, or as the starting point for your own ragù.
