A luxurious alternative to classic basil pesto, made with Sicilian pistachios — known locally as l'oro verde, the green gold of Sicily — blended with toasted Avola almonds, aged Parmigiano Reggiano, fresh basil, and a touch of black pepper and sea salt. Rich, nutty, and deeply aromatic, with none of the added oils or fillers you'll find in supermarket versions.

Toss through warm pasta for an instant Sicilian supper — trofie, linguine, or fusilli work beautifully — or spread on toasted bread as a crostino, spoon onto grilled fish, stir into risotto, or use as a finishing touch on pizza bianca. A little goes a long way.
